Ingredients:

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1 cup milk
  • 2 eggs
  • 1/3 cup canola oil

Directions:

  1. Preheat oven to 350 degrees Fahrenheit and grease a 12 cup muffin pan.
  2. Combine dry ingredients in a small mixing bowl and set aside.
  3. Whisk together the eggs, oil and milk in a medium size bowl until frothy.
  4. Pour the dry ingredients into the egg mixture until just incorporated.
  5. Add the berries to the mixture and stir until well coated and smooth and creamy texture.
  6. Pour into greased muffin cups and put in the oven for 20 minutes or until a knife inserted in the center comes out clean.
