Ingredients:

  • 2 lbs beets
  • 1 tbsp olive oil
  • pinch of sea salt
  • pinch of freshly group pepper
  • 1/3 cup feta cheese
  • 1 tbsp mint

Directions:

  1. 1. You can use fresh beets and just slice them into wedges
  2. 2. To make the vinaigrette - in a small bowl whisk together the oil, vinegar and salt and pepper. pour the vinaigrette over the beets and then sprinkle with the feta and mint
