Ingredients:

  • 1 1/2 lbs stewing beef
  • 2 tbsp flour
  • 3 cups tomato juice
  • 1/2 cup chicken stock
  • 2 tsp kitchen bouquet (can subsitute 2 beef oxo cubes)
  • 2 tbsp oil
  • 1/2 tsp basil flakes
  • 2 finely chopped garlic cloves
  • 2 cups carrots
  • 2 cups potatoes
  • 1/2 cup diced onion
  • 1 cup celery

Directions:

  1. Put the flour In a plastic bag and coat stewing beef pieces. Brown in oil. Add tomato juice, onions, garlic, bayleaf, 2 tsp kitchen bouquet, basil and oregano and bring to a boil. reduce heat , cover and simmer for 1 & 1/2 hours. Add carrots, potatoes and celery (cut to your preferred size) and simmer another 1/2 hour.
  2. Serve with crusty bread for an excellent winter dish.
  3. I cook this on the stovetop in a 4 quart skillet with lid.
