Ingredients:

  • 1 lb lean boneless lamb , cut into 1 inch pieces
  • 1 tbsp cooking oil
  • 2 1/2 cups peeled turnips , cut into 1/2 inch pieces (2 medium)
  • 1 1/2 cups carrots , cut into 1/2 inch pieces (3 medium)
  • 1 1/2 cups peeled potatoes , cut into 1/2 inch pieces (2 medium)
  • 2 medium onions, cut into wedges
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups beef broth

Directions:

  1. In a large skillet brown lamb, half at a time in the hot oil.
  2. Drain off fat.
  3. Combine turnips, carrots, potatoes, onions, tapioca, salt, pepper and thyme in your slow cooker.
  4. Stir in lamb and broth.
  5. Cover and cook on low heat setting for 10-12 hours or on high heat for 5-6 hours.
