Ingredients:

Directions:

  1. Heat oil in saucepan.
  2. Add garlic and parsley; saute until garlic is fragrant and parsley is wilted.
  3. Add the mushrooms; cook and stir until they darken (about 3 minutes).
  4. Add wine and barley; cook and stir another 3 minutes.
  5. Add broth, bring to a boil then lower to medium heat.
  6. Cover and simmer 40 minutes.
  7. Remove from heat and let stand, uncovered, for 10 minutes before serving.
