Vegan Mushroom Barley Soup

Ingredients:

  • 13 g. garlic
  • 192 g. onion
  • 200 g. barley
  • 180 g. carrots

Directions:

  1. Soak dried mushrooms in 2 quarts h20 for 15 minutes
  2. Remove from water and chop, saving soaking water
  3. Saute in pam in a large soup kettle onions and garlic
  4. Add remaining ingredients along with strained soaking water
  5. Bring to boil and turn down, simmering for 60 minutes
