Barbecue Pulled Chicken Sandwiches

Ingredients:

Directions:

  1. Heat stock in shallow pan to a low simmer.
  2. Add chicken to stock.
  3. Poach chicken for 5 minutes each side.
  4. Remove chicken to plate to cool. Reserve stock for sauce.
  5. In a large bowl mix together all sauce ingredients, EXCEPT the flour.
  6. Add mixed ingredients to simmering stock, reserved from poaching the chicken.
  7. Let liquid reduce for 5 minutes.
  8. Cut cooled chicken into strips.
  9. Add chicken into the simmering liquid.
  10. Shred chicken until it looks like pulled pork.
  11. Add the tbsp of flour.
  12. Let cook until sauce thickens.
  13. Serve on a lightly toasted onion roll and enjoy!
