  1. Preheat oven to 350F
  2. Blend wet ingredients in a bowl
  3. Mix dry ingredients in a separate bowl
  4. Add wet mix to dry, and stir until just combined
  5. Scoop mix into muffin tin
  6. Sprinkle with cinnamon if desired
  7. Bake 15-20 minutes, or until a toothpick comes out clean.
