Makes 24 mini muffins at 28 cals a piece, 12 muffins at 57 cals each. Add 1/8 cup stevia.
Ingredients:
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon kosher salt
1 banana, mashed
1/4 cup unsweetened applesauce
1 egg
1 1/2 teaspoon vanilla extract
Directions:
1. preheat oven to 350F
2. blend wet ingredients in a bowl
3. mix dry ingredients in a separate bowl
4. add wet mix to dry, and stir until just combined
5. scoop mix into muffin tin
6. sprinkle with cinnamon if desired
7. bake 15-20 minutes, or until a toothpick comes out clean.
