Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 3 large ripe bananas, mashed (the riper the better)
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1/2 tsp vanilla extract (not the fake stuff)
  • 1/2 tsp honey

Directions:

  1. In lg bowl, mix the 1st 4 ingredients.
  2. In a different bowl. Beat sugar, egg, vanilla, honey and butter.
  3. Mix in the bananas.
  4. Stir into dry mixture just until moistened.
  5. Fill LINED muffin tray cups 3/4 full.
  6. Bake at 375° for about 20 - 25 minutes.
  7. Let them cool on rack and enjoy.
