Ingredients:

  • 1/4 cup soy flour
  • 1/2 tsp salt
  • 1/3 cup millet
  • 1/2 cup applesauce
  • 2 cups bananas
  • 1/4 cup walnuts

Directions:

  1. Preheat oven to 350 F
  2. In a large bowl, mix together flours, baking soda, salt, and
  3. Millet. Set aside
  4. In blender, puree on high speed the applesauce, egg or equivilent,
  5. Bananas and raisins.
  6. Add wet stuff to dry, moisten evenly.
  7. Spoon batter into non-stick 12 muffin tin deviding evenly and bake 40-50
  8. Minutes at 350 F or until browned.
  9. Remove muffins from pan, cool to room tempeerature.
