Ingredients:

  • 1 cup sugar
  • 1/2 cup butter or 1/2 cup margarine, softened
  • 2 large eggs
  • 1 1/4 cups cake flour
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chip
  • 1/2 cup chopped nuts (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease and flour 9x5 loaf pan.
  3. Mix sugar and butter til light and fluffy.
  4. Add eggs, vanilla, and mashed bananas. Mix well.
  5. Sift together cake flour, baking soda, and salt.
  6. Stir flour mixture into banana mixture til all moist.
  7. Stir in mini chips and nuts. Do not overstir.
  8. Pour batter into loaf pan.
  9. Bake approximately 55 minutes til toothpick inserted in center comes out clean.
