Banana Bread With Protein (Chickpeas)

Ingredients:

  • 1 (16 oz) can chickpeas
  • 2 medium ripe bananas
  • 1 tsp vanilla
  • 2 large eggs
  • 1 cup flour
  • 1/2 cup soy flour
  • 1/4 cup sugar

Directions:

  1. Preheat oven to 350 and grease and flour loaf pan.
  2. Rinse chickpeas.
  3. Use blender to mush chickpeas with the yogurt.
  4. Add bananas and continue to blend till smooth, thick consistency
  5. Scrape sides and check for large pieces of chickpeas - if you find them keep blending.
  6. In one bowl, combine chickpea mixture with all other ingredients.
  7. Stir together.
  8. Put in loaf pan.
  9. Bake for an hour, until toothpick comes out clean.
