Banana Bread Muffins

Ingredients:

  • 2 cups flour
  • 1/4 tsp salt
  • 1/2 cup 1 stick butter
  • 3/4 cup brown sugar
  • 2 large eggs, beaten

Directions:

  1. Preheat oven to 350°F.
  2. Line Cupcake tin with papers & spray with vanilla pam (pam for baking).
  3. In Large bowl, combine flour soda & salt.
  4. In a separate bowl, cream together Butter & Sugar.
  5. Stir in Eggs & mashed Bananas until well blended.
  6. Stir Banana mixture into flour mixture (I used an electric mixer on low).
  7. Fill muffin tins with generous amount of Banana batter (I fill almost to the top).
  8. Bake 20 min or untill toothpic comes out clean.
