Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Line muffin tins with cupcake liners or butter.
  3. In a large bowl mix together the flour, baking soda and salt.
  4. In a medium bowl beat together the butter and sugar.
  5. Beat in egg, buttermilk and vanilla.
  6. Gently stir in mango, coconut, and lime zest.
  7. Pour over dry mixture, stirring until dry ingredients are just moistened.
  8. Do not over mix.
  9. Spoon into prepared muffin tin, each cup 3/4 full.
  10. Bake for 30 minutes.
  11. Brush tops with honey, remove from muffin tin and cool on wire rack.
