Balsamic Onion and Blue Cheese Salad

Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. Cut onions in half and slice to 1/4 inch thickness.
  3. Place on baking sheet and toss with 1/4 cup balsamic, 1/8 cup olive oil, 1 t. salt and 1/2 t. pepper.
  4. Bake the onions 15 - 20 minutes or until tender and nicely roasted.
  5. Remove from the oven and toss with 2 T. balsamic and let cool.
  6. For the dressing:.
  7. Whisk shallots, mustard, red wine vinegar, 1/2 t. salt and 1/2 t. pepper in small bowl.
  8. While whisking, add 1/2 cup olive oil until dressing is emulsified.
  9. Mash 1/4 cup of the blue cheese with a fork and add it to the dressing.
  10. To assemble:.
  11. Toss enough lettuce for 6 with dressing to taste.
  12. Place on 6 plates and arrange onions on top.
  13. Coursely crumble the rest of the blue cheese on top.
  14. Sprinkle with salt and pepper to taste.
  15. EAT!
