Another winner from my sis. I'm not sure where she found this recipe but it is fantastic. I could make a meal of this!

6 tablespoons shallots, minced (about 2 large)
2 teaspoons dijon mustard

Directions:
1. Preheat oven to 375 degrees.

3. Place on baking sheet and toss with 1/4 cup balsamic, 1/8 cup olive oil, 1 t. salt and 1/2 t. pepper.
4. Bake the onions 15 - 20 minutes or until tender and nicely roasted.
5. Remove from the oven and toss with 2 T. balsamic and let cool.
6. For the dressing:.
