  1. Preheat oven to 400 degrees fahrenheit
  2. * can substitute white wine for red wine vinegar
  3. In a small saucepan, heat garlic until soft and mix with dijon, balsamic and red wine vinegar and honey, mix well.
  4. Place salmon in a non-stick baking pan and brush with heated balsamic mixture
  5. Sprinkle salmon with oregano and cook in oven for 10 to 14 minutes.
