  1. Spray a medium-size nonstick skillet with olive oil and heat on medium-high. Brown the chicken for 3 minutes, turn, and cook for another 3 minutes. Remove from heat and cover with lid; let sit for 3 minutes. Remove the chicken to a plate, sprinkle with salt and pepper to taste, and cover to keep warm.
  2. In the same skillet, add the vinegar. Cook on medium-high about 30 seconds to reduce, or until about half the amount of liquid remains. Add the mustard and mix well to make a smooth glaze.
  3. Return the chicken to the skillet, turning to coat both sides with the glaze. Cook another minute, then divide between 2 plates to serve. Spoon any remaining glaze on top.
