Balsamic & Brown Sugar-Glazed Beans

Ingredients:

Directions:

  1. Trim the beans and cut into 2-inch lengths.
  2. Bring a pan of water to the boil, add the beans and time 4 to 5 minutes.
  3. Add bell pepper and cook 1 minute.
  4. Test beans for tenderness.
  5. Continue cooking a minute or so longer if necessary.
  6. Drain and rinse with cold water until cooled.
  7. Pat dry with paper towels.
  8. Melt a tablespoon butter in a large heavy skillet over medium heat.
  9. When hot, put pecans in pan and saute 4 minutes.
  10. Remove from the pan and set aside.
  11. Put remaining 2 tablespoons butter in pan and melt.
  12. Add balsamic vinegar, brown sugar, salt and pepper.
  13. Stir until sugar has melted and mixture has thickened.
  14. Add beans and peppers, tossing a few minutes until hot and glazed.
  15. Add pecans and serve.
