  1. Combine 1 cup of salsa and 1/3 cup canned black beans, drained and rinsed, in a skillet. Bring to boil and reduce to a simmer. Using a spoon, make two 2-inch indentations in the mixture so you can see the bottom of the skillet. Crack 1 egg into each indentation. Transfer skillet to a 400 degree oven and cook, uncovered, until eggs are set, 8 to 10 minutes (or cover and cook eggs on a stove top, until they are set, 2 to 3 minutes). Carefully transfer to two bowls and top with chopped onions, sour cream, cilantro and guacamole.
