Baked Creamed Spinach

Ingredients:

  • 2 lb sfresh spinach
  • 1 1/2 cups hot milk
  • 2 tbsp butter
  • 1 tsp salt
  • pinch pepper
  • pinch nutmeg

Directions:

  1. Trim and wash spinach.
  2. Butter a 3-quart ovenproof casserole.
  3. Place in suitably-sized pot with water still clinging to its leaves.
  4. Cover and cook until just wilted.
  5. Preheat oven to 375 degrees F.
  6. Allow to cool.
  7. Squeeze out excess water.
  8. Melt the butter in a saucepan.
  9. Whisk flour into butter and cook gently, whisking, for 2 minutes.
  10. Gradually add the milk, whisking constantly.
  11. Bring to a boil.
  12. Reduce heat to simmer.
  13. Add salt, pinch of pepper and nutmeg.
  14. Cook for about 5 minutes.
  15. Combine sauce with spinach and 1/2 cup of grated cheese.
  16. Spoon into prepared baking dish.
  17. Top with remaining cheese.
  18. Bake for 20 minutes.
  19. Serve.
