Baked Chicken Parmesan

Ingredients:

Directions:

  1. Pat chicken dry.
  2. Pound to flatten slightly.
  3. Dust lightly with flour.
  4. Dip into egg.
  5. Combine breadcrumbs with 1/4 cup of the parmesan cheese.
  6. Dip chicken in crumb mixture.
  7. Line a 9 x 13 dish with foil.
  8. Brush with vegetable oil.
  9. Arrange chicken in a single layer.
  10. Bake in a preheated 400 oven for 20 minutes.
  11. Meanwhile, in a med size saucepan, melt butter and whisk in flour.
  12. Cook, without browning, 3 minutes.
  13. Whisk in milk and bring to a gentle boil.
  14. Add salt, pepper, basil and oregano.
  15. Reduce heat.
  16. Cook 5 minutes, stirring often.
  17. Spread some of the creamy sauce on each piece of chicken.
  18. Drizzle with tomato sauce and sprinkle with mozzarella cheese and remaining parmesan.
  19. Bake 15-20 minutes longer.
