Turkey Stuffed Yellow & Red Bell Peppers

Ingredients:

Directions:

  1. Preheat to 375.
  2. Cut peppers lengthwise and seed.
  3. Place cut side up on a baking sheet-you can lightly steam them if you want to.
  4. Heat oil in skillet over medium high.
  5. Add onion and garlic and sauté for 5 minutes.
  6. Stir a few times.
  7. Add meat, stirring often for 5 minutes.
  8. Add tomatoes and rice and cook for 5 more minutes.
  9. Remove from heat, add herbs and salt and pepper, stir in cheddar.
  10. Fill peppers.
  11. Combine breadcrumbs, parmesan and toss with melted butter-mix well.
  12. Top peppers and bake for 30-40 minutes.
