Baked Apple Butterscotch Pudding

Ingredients:

  • 1 tbsp cornstarch
  • 1/4 cup butter
  • 1 cup water
  • 1 1/3 cups sifted all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup brown sugar
  • 1/4 cup butter
  • 1/2 cup milk
  • 2 1/2 cups sliced apples, mixed with
  • 1/3 cup brown sugar

Directions:

  1. In a saucepan, combine 1 cup brown sugar, and cornstarch, 1/4 cup butter.
  2. Stir in 1 cup water; cook over low heat until thickened.
  3. Pour mixture into a lightly buttered 10x6-inch baking dish.
  4. In a bowl, combine sifted flour, baking powder, salt, and 2/3 cup brown sugar.
  5. Blend in 1/4 cup butter and the 1/2 cup milk, stirring just until dampened.
  6. Stir in the sliced apples with 1/3 cup brown sugar.
  7. Pour apple batter over syrup in baking dish.
  8. Bake at 350° for 30 minutes.
