Bacon Wrapped Meatloaf with Glaze

Ingredients:

  • 1/2 cup ketchup
  • 4 tbsp brown sugar
  • 2 tsp oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/2 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup plain yogurt
  • 1/2 lb ground veal
  • 1/2 lb ground pork
  • 2/3 cup oatmeal
  • 8 -12 slices bacon

Directions:

  1. Heat oven to 350 degrees.
  2. For glaze, mix ketchup, brown sugar and vinegar together, set aside.
  3. Saute onions and garlic in oil.
  4. Mix onions and garlic with the rest of the meatloaf ingredients.
  5. You may find it helpful to use your hands.
  6. Shape into loaf, put onto a foil lined pan.
  7. Brush half of the glaze over the loaf.
  8. Wrap bacon around loaf, tucking ends under.
  9. Bake approximately 1 hour, bacon should crisp up.
  10. Cool 20 minutes before cutting.
  11. Serve with extra glaze.
