Ingredients:

  • 2 cups ap flour
  • 2 tsp cinnamon
  • 1 cup oil
  • 3 eggs
  • 1 1/3 cup flaked coconut
  • 2 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups white sugar
  • 1- 80 z can crushed pineapple
  • 1/2 cup chopped walnuts .

Directions:

  1. Mix flour, baking soda, cinnamon and salt.
  2. Beat oil, sugar and eggs thoroughly in a separate bowl.
  3. Add flour mixture, beat until smooth. Add pineapple, carrots, coconut and nuts.
  4. Pour into a greased 13”x9” pan for 50-60min at 350F. Cool for 10min and remove from pan.
