Ingredients:

Directions:

  1. If you have time (in the morning), put the milk in a heavy pan and heat along with the nutmeg, pepper, cardamoms, bay leaf and onion.
  2. Boil and turn off the heat.
  3. Steep for at least 2 hours, the longer the better (don't discard the onions afterwards, they're great for making caramelized onions ).
  4. Take a heavy based pan and melt the butter.
  5. Stir in the flour and cook it for about 2 minutes on a low heat (do not let it brown).
  6. Remove from the heat and let it cool slightly.
  7. Strain the milk (if you've flavoured it) and whisk it into the roux.
  8. Place back on the heat and bring it to the boil.
  9. Lower the heat and add double cream.
  10. Homogenize and add cheese.
  11. Stir until the cheese has melted.
  12. Can be frozen, chilled, reheated, microwaved, whatever!
