  1. Preheat oven to 350 degrees F (175 degrees C)
  2. Place the chicken, cardamom pods, cinnamon, and the whole three red onion into a large oven plate
  3. Fill with enough water to cover the chicken
  4. Bring to a boil over medium-high heat;
  5. Boil for 20 minutes or till the chicken is cooked.
  6. . Reserve 4 cups of the resulting chicken stock in a large saucepan.
  7. Remove the chicken and onion from the oven and place in a roasting pan.
  8. Season the chicken with the dried cilantro, black pepper, and salt; cover with aluminum foil.
  9. Bake the chicken in the preheated oven for 10 minutes, then remove the foil and continue baking until the chicken becomes golden brown.
  10. Meanwhile, pour the rice in with the reserved chicken stock add another cinnamon stick and cardamom to add more flavor to the rice.
  11. Bring the rice to a boil over high heat, stirring occasionally.Boil until the rice is tender and stir gently.
  12. When rice become sticky, add the milk to the rice then add butter on the top
  13. Once it reaches a boil, cover the saucepan and reduce the heat to low,
  14. Simmer covered for 15 minutes.
  15. ; cook uncovered until no liquid remains.
  16. Serve the rice topped with the chicken and onion
