Apricot Carrot Bread

Ingredients:

  • 1 3/4 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 1 egg
  • 2 tbsp oil

Directions:

  1. Preheat oven 350 degrees Fahrenheit.
  2. Spray an 8 x 4 inch pan with non stick cooking spray.
  3. Combine flour, baking powder, baking soda, salt, and sugar.
  4. Add apricots.
  5. Add carrots, applesauce, egg, and oil; stir until just combined; will be thick.
  6. Pour into baking pan.
  7. Bake 45 to 50 minutes.
  8. Cool overnight.
  9. Next day combine powdered sugar and apple juice for the glaze; pour over top.
