Applesauce Spiced Bars

Ingredients:

  • 1 cup sugar
  • 1/3 cup butter or margarine
  • 1 large egg
  • 1-1/2 cups applesauce
  • 1-1/2 cups all-purpose flour
  • 1/4 tsp. ground nutmeg
  • 3/4 tsp. xanthan gum
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup raisins (optional)

Directions:

  1. Cream butter and sugar in mixer bowl.
  2. Beat in egg.
  3. Add applesauce.
  4. Mix flour, spices, soda, and salt in a separate bowl and add to the wet ingredients.
  5. Mix well.
  6. Stir in raisins by hand.
  7. Spoon batter into oil sprayed 9 x 13 inch baking pan.
  8. Bake at 350 F for 30 to 35 minutes or until toothpick inserted in center comes out clean.
  9. Cool completely.
  10. Frost.
  11. Cut into bars.
  12. Makes 2 dozen bars.
