Oatmeal Delight Muffins

Ingredients:

  • 1 1/2 cups boiling water
  • 1 1/2 cups quick oats
  • 3/4 cup sugar
  • 1 1/4 cups brown sugar
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1/2 cup raisins
  • 1/2 cup coconut

Directions:

  1. Preheat oven to 400º.
  2. Combine boiling water and oats in a bowl, cover and set aside (no need to actually cook them on the stove).
  3. Cream margarine and sugars, add eggs and vanilla.
  4. Add dry ingredients and mix well.
  5. Stir in nuts, raisins and coconut, then softened oatmeal.
  6. Scoop into paper lined or sprayed muffin tins.
  7. Bake for 25-30 minutes or until done.
  8. NOTES : An ice cream scoop works well to portion out muffin batter. You can mix a larger batch of this muffin batter and store it in the refrigerator for up to 2 weeks and bake off fresh muffins whenever you want them.
