Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. Coat 12 medium-size cups with vegetable oil or line with paper baking cups.
  3. In a medium bowl combine Oat Bran cereal, cinnamon, baking powder, soda, and salt.
  4. In a large bowl combine applesauce, honey, oil, egg, and vanilla.
  5. Stir in dry ingredients; mix well.
  6. Stir in nuts.
  7. Fill prepared muffin cups almost full.
  8. Bake 15 to 20 minutes or until golden brown.
  9. Serve warm.
