Apple Cinnamon Muffins

Ingredients:

  • (1) 1 1/2 cups flour
  • (2) 3/4 cup flaxseed meal
  • (3) 3/4 cup wheat bran
  • (4) 1 tsp baking soda
  • (5) 1 tsp baking powder
  • (6) 1/2 tsp salt
  • (7) 3 1/2 tsp cinnamon
  • (8) 1 1/3 tsp nutmeg
  • (9) 1 cup brown sugar
  • (10) 2 tsp vanilla
  • (11) 1/2 cup honey
  • (12) 4 tsp oil
  • (14) 1 cup milk
  • (15) 2 apples , stripped of skin and cut into small pieces
  • 4 bowls
  • 1 whisk

Directions:

  1. Preheat oven to 375-f
  2. (bowl 1) add all dry ingredients in bowl (first eight listed)
  3. (bowl 2) whisk egg
  4. (bowl 3) add all moist ingredients (# 9-14)
  5. Add bowl 2 to bowl 3
  6. Add bowl 3 to bowl 1, stir with whisk until mixed well
  7. (bowl 4) take apples and mash with masher, leave chunks
  8. Add bowl 4 to 1
  9. Bake for 15-20 minutes, or until fork comes out clear from center of muffin
  10. Before eating the muffin, i suggest cutting a horizonal slit into the middle of the muffin and squeezing honey into it. then there is honey in every bite. :)
