Ingredients:

Directions:

  1. Preheat oven to 350º F.
  2. Grease muffins pans or line with papper cups.
  3. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg in a large bowl.
  4. Combine milk, beaten eggs and vanilla in another bowl. Stir in carrots, apples, raisins and walnuts.
  5. Pour liquid mixture into dry ingredients.
  6. Stir until ingredients are moistened. Do not overmix.
  7. FIll muffins cups 3/4 full.
  8. Bake at 350ºF for 15 to 20 minutes.
