Big Apple Cinnamon Muffins

Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1 1/2 cups of diced apples
  • 1 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • topping
  • 1/3 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup olive oil

Directions:

  1. Heat oven to 400 degrees. Grease muffins tins.
  2. Mix egg, milk, oil, and apples in a bowl.
  3. Mix flour, sugar, baking powder, salt, and cinnamon in a different bowl.
  4. Add the flour mixture to the wet mixture. Stir until moistened.
  5. Fill muffin tins until 2/3 of the way full.
  6. Mix brown sugar, cinnamon, and oil to make a paste. Crumble on top of muffins.
  7. Bake for 25 to 30 minutes.
