Delicious and nutritious.
Ingredients:
(1) 1 1/2 cups flour
(2) 3/4 cup flaxseed meal
(3) 3/4 cup wheat bran
(4) 1 tsp baking soda
(5) 1 tsp baking powder
(6) 1/2 tsp salt
(7) 3 1/2 tsp cinnamon
(8) 1 1/3 tsp nutmeg
(9) 1 cup brown sugar
(10) 2 tsp vanilla
(11) 1/2 cup honey
(12) 4 tsp oil
(13) 2 eggs, previously whisked
(14) 1 cup milk
(15) 2 apples, stripped of skin and cut into small pieces
4 bowls
1 whisk
1 masher
spray cooking oil
Directions:
1. Preheat oven to 375-f
2. (bowl 1) add all dry ingredients in bowl (first eight listed)
3. (bowl 2) whisk egg
4. (bowl 3) add all moist ingredients (# 9-14)
5. add bowl 2 to bowl 3
6. add bowl 3 to bowl 1, stir with whisk until mixed well
7. (bowl 4) take apples and mash with masher, leave chunks
8. add bowl 4 to 1
9. bake for 15-20 minutes, or until fork comes out clear from center of muffin
10. before eating the muffin, i suggest cutting a horizonal slit into the middle of the muffin and squeezing honey into it. then there is honey in every bite. :)
