Ingredients:

Directions:

  1. Cut off root part of fennel, chop the bulb and stems finely ( I used food processor ) reserve the fringy leaves
  2. Chop the apple in the same consistency
  3. Mix apple and fennel together with some chooped walnuts
  4. Moisten all with olive oil
  5. Sweeten with honey
  6. Salt and ppper to taste
  7. Best serve the first one to 2 days, after that still great but loses some crispness
  8. Place in bowl and garish with fennel fronds
  9. Serve well chilled
