Honey Ginger Roasted Chicken

Ingredients:

  • 1 (4 lb) cut chicken
  • 1/2 lemon
  • 1/3 cup peanut oil
  • 1/4 cup honey
  • 1 pinch salt

Directions:

  1. Rub chicken pieces with the lemon.
  2. Sprinkle chicken with 1/2 the ginger and salt.
  3. Combine the oil, honey and remaining ginger.
  4. Brush chicken honey mixture.
  5. Roast in oven 350°F for 1 1/2 to 2 hours, basting occasionally with honey mixture.
  6. Serve and enjoy!
