Ingredients:

  • 1 cup tamari soy sauce (teriyaki can be substituted)
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • 2 tbsp ginger
  • 1 tbsp garlic
  • 2 tbsp cherry wood chips

Directions:

  1. Mix the tamari (or teriyaki), lemon, lime, ginger and garlic and marinate the tuna for 2 hours.
  2. Smoke 1 or 2 pounds, 13 or 14 minutes maximum, on medium heat using the cherry wood chips.
  3. At this point the tuna is slightly raw in the center and is fantastic!
  4. If you prefer it completely cooked, finish it by grilling 2 minutes on each side.
