  1. Saute onions and chili pepper in oil until onion is transparent.
  2. Add peanut butter and coconut milk slowly, stirring constantly until it comes to a boil. Add spinach. Salt to taste.
  3. Reduce heat and simmer 15 minutes or until spinach is cooked.
