Ground Nut Stew Aka Peanut Soup

Ingredients:

Directions:

  1. Saute onions in oil for about 10 minutes.
  2. Stir in cayenne and garlic and saute for a couple more minutes.
  3. Add cabbage and sweet potatoes and saute, covered for a few minutes.
  4. Mix in juices, salt, ginger, cilantro and tomatoes.
  5. Cover and simmer for about 15 minutes, until the sweet potatoes are tender.
  6. Add okra; simmer for 5 minutes more.
  7. Stir in peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve.
  8. Add more juice or water if the stew is too thick.
