Directions:

  1. In dutch oven, add oil and cook chicken until no longer pink
  2. Add onion and garlic and cook until onion is tender
  3. Add remaining ingredients except rice and stir until combined
  4. Bring to boil
  5. Reduce heat to medium low, cover and cook until sweet potato is tender...About 30 minutes
  6. If stew gets too thick, add additional water
  7. Serve over white rice
  8. Serves 8
