African Couscous Peanut Stew

Ingredients:

Directions:

  1. Heat 1/2 Tbsp of peanut oil in stock pot over medium high heat.
  2. Add curry powder and cook, stirring constantly for 1 min.
  3. Add onions and cook for 2 min, while stirring.
  4. Add garlic and cook for 1 more minute.
  5. Stir in yams, 1 1/2 cups vegetable stock and tomatoes.
  6. Bring to a boil. Simmer 20-30 minutes covered.
  7. In a large skillet or frying pan, heat remaining peanut oil. Add cinnamon and heat through.
  8. Add couscous and sear 1-2 mins.
  9. Add 1/2 cup vegetable stock and cook until couscous grains are soft.
  10. Season with salt and pepper.
  11. Add couscous, peanut butter and coconut milk to the stew. Stir until combined.
  12. Bring to a simmer and cook for 20 mins.
