Couscous Cilantro Veggie Burger

Ingredients:

Directions:

  1. Cook couscous
  2. Thaw veggies (if frozen) and lightly cook
  3. Drain and rinse garbanzo beans
  4. Mix onions, corn, peas, and carrots in a large bowl, then add 2/3 of the cooked couscous
  5. Blend garbanzo beans, spinach, and cilantro into a puree
  6. Add eggs and blend, one at a time
  7. Add stuffing crumbs and blend
  8. Combine all ingredients (including olive oil) and mix until nearly smooth
  9. Add the remaining 1/3 couscous (this will serve to both bind ingredients together and add a delicious grainy texture)
  10. Fry on stovetop in a bit of olive oil or grill. Burgers will have a green color due to the spinach and cilantro; cook until golden brown on both sides
  11. Serve on a whole wheat bun with veganaise, tomato, romaine, and avacado slices
