3 Cabbage Coleslaw No Mayonnaise

Ingredients:

  • 11 cups finely shredded green cabbage
  • 4 cups finely shredded nappa cabbage
  • 2 1/4 cups finely chopped onions
  • 1 cup finely chopped green peppers
  • 3/4 cup finely shredded carrots
  • 2 cups sugar
  • 1/3 cup vegetable oil
  • 1 tbsp. salt
  • 1 tbsp. celery seed
  • 1 teasp. dry mustard
  • 1/2 teasp. ground black pepper
  • some thin sliced cucumbers are nice in this also

Directions:

  1. In a very large bine cabbages, onions, peppers, and carrots
  2. In a medium saucepan combine sugar, vinegar, oil, salt, celery seeds, dry mustard, and black pepper.
  3. Stirring frequently, cook over medium-high heat about 6 minutes or until it comes to a boil
  4. Pour hot vinegar mixture over the cabbage mixture.
  5. Toss until vegetables are well coated
  6. Cover and chill at least 8 hours
