100 Proof Carrots

Ingredients:

  • 6 tbsp butter
  • 1/2 onion,sliced thin
  • 1/2 tsp nutmeg
  • 3-1/2 tbsp vodka
  • 2 tbsp brown sugar
  • 1/2 cup raisins , if you wish

Directions:

  1. Cut carrots in 1 slices,on the angle.
  2. Melt butter and saute carrots for about 4 minutes,stirring over low heat.
  3. Add onion and nutmeg,stir and cook about 2 minutes.
  4. Add vodka and reduce heat to simmer,cover.
  5. Cook for about 30 minutes or until tender.
  6. Add sugar,dissolve for about 3 minutes,add raisins ,stir until heated through.
