Ingredients:

  • 1 tbsp butter
  • 1 1/2 lbs tart apples
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/2 cup whole milk
  • 1/2 cup flour
  • 2 tbsp sugar
  • 1/4 tsp
  • 1 tsp sugar additional

Directions:

  1. Preheat the oven to 450F.
  2. Spoon 1 tablespoon butter into a large, oven-proof skillet and let it melt in the oven.
  3. Melt 2 tablespoons butter over medium heat in a second large skillet.
  4. Peel, core and thinly slice 3 tart apples (about 1-1/2 pounds), adding to the skillet as they’re prepped.
  5. Once all the apples are in, cook about 5 minutes, stirring occasionally.
  6. Stir in 1/4 cup brown sugar, 1/4 teaspoon nutmeg and 1/4 teaspoon cinnamon.
  7. Cover and cook for about 10 minutes, until soft and syrupy.
  8. Once cooked, reduce heat to low to keep warm.
  9. While the apples cook, mix 2 eggs, 1/2 cup whole milk (low-fat milk doesn’t work), 1/2 cup flour, 2 tablespoons sugar and 1/4 teaspoon salt with a hand mixer or in a blender.
  10. Spread the butter around the first skillet and up the sides, then pour the batter in.
  11. Sprinkle with another 1 tablespoon sugar.
  12. Bake for 15 minutes, watching through the oven window; when it puffs up,
  13. Puncture with a fork.
  14. Reduce the temperature to 350F and bake for another 10 minutes. Remove from oven and transfer to plates.
  15. Top with warm apple mixture and serve.
