Sometimes Vegetables get neglected,which is a shame,these refuse to be overlooked at our table. Ingredients:
8 carrots,peeled |
6 tablespoons butter |
1/2 onion,sliced thin |
1/2 teaspoon nutmeg |
3-1/2 tablespoons vodka |
2 tablespoons brown sugar |
1/2 cup raisins,if you wish |
Directions:
1. Cut carrots in 1 slices,on the angle. 2. Melt butter and saute carrots for about 4 minutes,stirring over low heat. 3. Add onion and nutmeg,stir and cook about 2 minutes. 4. Add vodka and reduce heat to simmer,cover. 5. Cook for about 30 minutes or until tender. 6. Add sugar,dissolve for about 3 minutes,add raisins ,stir until heated through. |
