Zucchini with Vinegar, Mint, and Garlic

Ingredients:

  • 2 lb. zucchini
  • 1/4 cup olive oil
  • 1/8 tsp salt
  • 2 tsp mint
  • 3 cloves garlic

Directions:

  1. Cut zucchini lengthwise in slices. Arrange side by side on a baking sheet lined with foil and brushed with oil. Brush slices with olive oil.
  2. Cook under broiler until lightl browned, then turn over, brush, and return tobroiler.
  3. Mix vinegar with mint and garlic. Brush a little onto each slice.
